Baked Brie and Cranberry Puff Pastry

Who doesn’t love gooey, hot cheese? Especially with flaky breadBaked Brie and Cranberry Puff Pastry filled with sweet cranberry sauce to dip in it! These baked brie’s always look so fancy but are actually really easy to make. They are perfect to bring to potlucks, parties, for holidays, and of course to have on a night in with family.

With only three ingredients (well okay, four if you count the melted butter), you can put together one of these in a snap but make it look good enough that people will think you’ve been in the kitchen for hours! Love those recipes as it is so much nicer to bring this amazing dish to share even though it takes just about the same time to put together a cheese and cracker platter (cheaper too!).

I have tried making this with other fruits and we enjoyed the baked apple and brie – I added chopped walnuts which turned out yummy! Another favorite is adding some chopped bacon which goes really well with the cranberry sauce. Although, what doesn’t go well with bacon?

What you will need:

1 package frozen Pillsbury puff pastry baking sheets

1 small round of brie (8 ounces)

1/4 – 1/2 cup canned cranberry sauce with berries

melted butter (about 1-2 tablespoons)

Thaw out the puff pastry. Lay out one sheet and spoon about 1/4 cup to 1/2 cup of the cranberry sauce onto the puff pastry sheet, making sure to spread the cranberry sauce right up to the edges.

Top the cranberry sauce with the second sheet of puff pastry. Using the lid of the brie cheese container, cut out a hole in the center of the puff pastry and remove the hole, setting it aside.

Using a knife or pizza cutter, cut strips radiating out from the center of the puff pastry (being careful not to cut into the hole). I also cut the hole we took out into strips because there is no way I’m going to waste that delicious puff pastry with cranberry!

Once all of the strips are cut, gently twist each one just enough to let the puff pastry breath so it can expand and it also helps keep the cranberry sauce from leaking out while baking.

After all of the strips are twisted, add the brie to the center of your puff pastry. Slice into the top of the cheese so that it can bubble out a bit. Brush the pastry with the melted butter and bake in a 350 degree F oven for 40-60 minutes or until the puff pastry has puffed up and has started to get golden brown.

Remove from the oven and serve hot!

      Oh low calorie for sure! This is one of those “once-in-a-while” treats at our house as I agree, between the cheese and puff pastry, it isn’t something I could have every weekend! I like making this for a crowd though as I only get one or two pieces and feel better about that!
