Easter Pig Roast Swedish Style

A lot has happened since my last blog post. We cleaned our house like we’ve never cleaned before. We had a lot of planning Easter pig to go over and prep to do before we had some very special guests arriving for Easter weekend.

In 2009 we discovered a whole new branch of our family tree and were fortunate enough to travel over to Sweden to meet them. We spent a whirlwind time in Sweden meeting family members, piecing together our family history and learning to be comfortable with a newly expanded family that we didn’t even know existed. The memories we made were once in a lifetime and we weren’t sure if we would ever really meet again. We did keep in touch with some letters and of course on Facebook but a five years passed before we received a surprise email from one of our cousins that we had met in Sweden. Her husband was planning a surprise trip for her to come see us in Vermont!

This was a dream come true for all of us, though our cousin wasn’t privy to the plan at all until only three months before the trip. Once she was finally told, we could almost hear her joy from across the pond.

It was only coincidence that their trip should fall on Easter weekend and so we wanted to do something super special. We decided on a pig roast and was able to secure a smoker and some great friends willing to cook!

The four days they were with us were beyond wonderful but the day when the pig roasted all morning and then we feasted family style and ate and laughed and ate and shared and ate and hugged was the best memory. Funny how the best memories are always created around food.
