Easy Mini Caprese Salad
My favorite thing from the garden? Tomatoes! I always plant too many but I never complain about eating them all! One of the quickest and easiest things to do with all of my sweet cherry tomatoes is a mini caprese salad. A caprese salad is really just tomato and mozzarella salad with really good olive oil. They say that the salad never has vinegar on it as it would destroy the delicate flavor of the cheese but, I find that a flavored balsamic vinaigrette and a little salt is the perfect way to make this dish stand out.
The salad itself is simple, elegant, and classically summer. For my twist on this mini salad, take these few easy steps.
Simply take about a pint of cherry tomatoes, slice them in half and place them in a bowl.
Next, slice mini mozzarella balls in half and add them to your salad.
Pinch off small basil leaves, or roughly chop larger leaves and add in.
Add a pinch of salt and then about 2 tablespoons of your favorite balsamic vinaigrette (I always use one from the Saratoga Olive Oil Company), a drizzle of good olive oil, and toss to coat the cheese and tomatoes. Yes, the vinaigrette does make the cheese a dark color but it tastes darn good. Serve fresh!
