Banana Date and Walnut Smoothie

I love this smoothie recipe! It is sweet, satisfying, and not all that bad for you. The recipe makes about 2 cups and I usually make the smoothie the night before. That way I get to have half for dessert and then take the otherBanana walnut date smoothie half for a great “pick-me-up” drink at work the next day! The dates give this drink the sweetness it needs but I love the creaminess that comes from the yogurt and almond milk.

With a little protein from the yogurt and some good stuff in the coconut water and almond milk, it feels like an indulgence but is a great brain and energy boost drink!

1 medium banana, peeled

1/2 cup plain nonfat Greek yogurt

1/2 cup coconut water (optional – if omitted just add more almond milk)

1/2 cup unsweetened almond milk

3 tablespoons finely chopped walnuts

4 dried dates, finely chopped

1 cup ice

In a blender, combine all of the ingredients and blend on high until smooth.

Poor into glasses and serve. If you are storing any for later, be sure to mix or shake before drinking.
