Whiskey Party Pumpkin Seeds
This is my go-to party snack for the holidays! Most people serve a bowl of Chex party mix but we serve these awesome party pumpkin seeds instead! First, they are super flavorful and addicting. Second, they are a little healthier having the wholesome goodness of pumpkin seeds. The flavor these seeds have is so incredible with a rich smoky taste from the whiskey as well as a sweet and salty finish from the salt and brown sugar. Anyone who comes over and has these ask for the recipe.
These are super easy to make and well worth the time by the oven. Make a double batch though because they won’t last long. While you can buy raw seeds and make these, we use up our farm grown pumpkins all year long and every time we chop up a pumpkin, we wash the seeds and make this recipe.
If you are using your own pumpkin seeds, wash and dry them well to remove all of the slimy pumpkin that tends to stick to the seeds.
1-2 cups fresh pumpkin seeds
1/2 cup whiskey (we use Jack Daniel’s)
2 tablespoons of olive oil
1 tablespoon dark brown sugar
2 teaspoons of salt
In a medium saucepan stir together the pumpkin seeds, brown sugar, olive oil, whiskey and salt over medium-low heat. Bring the mixture to a low simmer and cook until the seeds begin to turn gray in the middle, about 10-15 minutes.
Drain the seeds and spread them out on a greased baking sheet in a single layer.
Place the seeds in the oven at 275°F and cook, stirring every 15 minutes, until they are crispy and golden brown, about 60-65 minutes.
