White Chocolate Chip Snickerdoodles

I love the sweet and sour tang of snickerdoodle cookies! This is a version of my homemade classic snickerdoodle recipe with white chocolate snickerdoodle cookiesa little twist….white chocolate chips and more spices in the sugar mixture. These cookies are easy to bake and make quite a few, perhaps enough to share. We tend to enjoy snickerdoodles in the fall and winter months. I’m not sure why, maybe because the spices that are used make them seem like a “cold weather” cookie!

1 1/2 cups sugar

1 cup butter

2 eggs

1 tablespoon vanilla

2 3/4 cup flour (all-purpose)

1 1/2 teaspoon cream of tartar

1 teaspoon baking soda

1/8 teaspoon baking powder

1/4 teaspoon salt

3 teaspoons pumpkin pie spice

1 cup white chocolate chips

For Sugar Coating:

3 teaspoons pumpkin pie spice

4 tablespoons sugar

1 teaspoon cinnamon

In a medium bowl cream together the butter, sugar, eggs and vanilla.

Add in the flour, cream of tartar, baking soda, baking powder, pumpkin pie spice and salt and mix thoroughly.

Add the white chocolate chips and mix until well combined.

Preheat oven to 375°F.  In a small bowl combine the ingredients for the sugar coating. Using your hands, form dough balls (about 1-inch) and roll them in the sugar mixture before placing them on a greased cookie sheet. These will spread so be sure to leave about 2-3 inches between cookie balls.

Place in the oven and bake for 8-10 minutes or until golden brown and set. Enjoy!
