Easy Buffalo Chicken Dip

This is an awesome party dip that feeds a crowd! It tastes just like buffalo chicken wings but is creamy with a little tang from buffalo chickenthe dressing. We love to eat this dip with scoop chips, but crackers, celery, and of course pita chips are all delicious! It is best served hot right out of the oven and although it will keep in the fridge for a few days, it won’t last that long!

The nice thing about this dip is that you can make it ahead of time. Just leave off the cheese on top, cover and refrigerate until you are ready and then you can bake it in the oven.

2 (10oz.) cans chunk chicken, drained

2 (8oz.) packages 1/3 less fat cream cheese

1 cup light ranch dressing

1/2 – 3/4 cup (depending upon the level of heat you want) hot sauce – Texas Pete or Franks work best

1 1/2 cup shredded yellow cheddar cheese

In a sauce pan over medium heat, combine the chicken and hot sauce and cook until heated through.

Stir in the cream cheese and ranch dressing and half the amount of shredded cheese.

Pour mixture into a 9×13 inch baking dish and spread evenly. *If you want to make the dip ahead, at this step, cover and refrigerate.

Sprinkle remaining cheddar cheese on top and bake in the oven for 10-15 minutes or until the cheese is melted and the dip is bubbly.

Sorry about the quality of the finished dip photo – we made this for a party we were throwing and I forgot all about taking a picture of it when it was done! Luckily, one of the party goers had taken a photo before it was all gone!
