Dinner last night…Fish and “Chips”

We grilled a beautiful fillet of salmon last night and paired it with “chips”….homemade kale chips that is!

our fish and "chips" dinnerWe love grilling fish and as long as you get thick middle cuts, salmon holds up quite well on the grill. Just remember to spray the grill liberally with non-stick spray!

Our kale bed is loving all of this rain and warm weather. I have been picking it steadily to use in salads, stir fry, soups, and in kale smoothies!

Just be sure to wash your kale really well after picking. The best method is to let it sit in a big bowl of cold water for 30 minutes or more. Using your hands, swish it around once in a while. When you take it out to dry it, you will see all of the dirt and sometimes little bugs at the bottom of the bowl.

This time when I made our kale chips, I used a little salt and olive oil and then some of Saratoga Olive Oil Company’s white peach balsamic vinegar. This is a great way to give the kale chips a little extra flavor!
