Gluten Free Chocolate Chip Cookies
Just like traditional chocolate chip cookie recipes, this one bakes to have a glorious golden crunch on the edges and stays nice and soft on the inside. Semi-sweet chocolate chips make this cookie perfect for those late night cravings! Easy to make, quick baking time, and great results every time! This recipe makes enough to share, making about 30 medium sized cookies.
2 sticks of butter
3/4 cup of packed brown sugar
3/4 cup of granulated sugar
1 Tablespoon of vanilla extract
2 1/4 cup of gluten free flour (I used Gluten Free Mama’s coconut blend but I have also used the almond blend and both work very well)
1 teaspoon of baking soda
1 teaspoon of salt
2 cups of semi-sweet chocolate chips
Preheat oven to 375°F.
In a large bowl, soften the butter and then beat together the butter and the two sugars.
Once well beaten, add in the vanilla and eggs. Beat until combined.
Add in the flour, baking soda and salt. Stir until well combined.
Fold in the chocolate chips. Drop generous tablespoonful’s of cookie dough onto greased baking sheets.
Bake for 8-10 minutes or until the edges of the cookies are golden brown and the center of the cookies are set.
Cool completely before storing in an airtight container.
