Two Ingredient Banana Peanut Butter Ice Cream

I was dubious about this idea of making “ice cream” with only bananas and peanut butter. Now I’m a believer! Thebanana ice cream texture is amazingly creamy and smooth for something that has no cream. The flavor is nicely balanced without being overly peanut buttery. This is a great dessert to serve when you have vegans or people with dairy allergies.

You do need to think about this dessert ahead of time as you will need to peel, slice and completely freeze the banana pieces before making the ice cream.

2 bananas

2 teaspoons of creamy peanut butter

Take your frozen banana slices out of the freezer and put into a blender or food processor that can handle ice chunks – which is what the banana slices should resemble.

Add the peanut butter and blend the banana chunks until smooth.

If the banana chunks are too dry to become smooth, you may need to add a little water or almond or soy milk – about 2 teaspoons.

Serve immediately and enjoy!

    Very interesting recipe for ice cream with two ingredients. I like that. But, I’d have to try substituting sun butter because we have peanut allergies in our family.

      I think any kind of butter would work well – it just gives the banana some flavor and also helps give the “ice cream” a little substance. It isn’t much, only two teaspoons, so I think that might taste good!
