Kale Orange Banana Shake
I have been trying to eat healthier lately and have gotten on a “kale kick.” Kale is a pretty awesome leafy green with huge amounts of your daily vitamin A, C, and K and a good source of calcium, iron and magnesium. Kale can be used in many recipes, but one of the good-for-you things you can do with kale is to make your own homemade kale shakes or smoothies!
The thing I like best about kale shakes is that I feel like I’m actually eating something if I have it for breakfast or for a fast lunch. The kale pieces get chopped down but there is still something to chew which makes me feel like I’m eating as opposed to drinking my meal.
Kale is not super strong in flavor so if you use flavor packed ingredients like oranges and bananas it tastes really good!
For this shake:
2 cups of orange juice with pulp
4-6 cups of kale washed with the thick stalks removed (I kind of eyeball the kale by adding as much as it takes to make a thick smoothie/shake)
1 banana peeled
Start with your orange juice in your blender and then add as much kale as you can without packing the blender too much. Blend on high until the kale is in tiny pieces.
If you weren’t able to fit all of your kale, now add the rest and continue to blend. When the kale is all in small pieces, add the banana in chunks and pulse until well blended.
Pour into a glass and enjoy! This recipe can make up to two full glass servings so I often refrigerate the second serving for later or the next day for breakfast.
