English Muffin Pizza’s for Adults
English muffin pizza’s and Spanish Champagne for dinner? Sounds good to me! I used to love English muffin pizza’s as a kid. I’m pretty sure my mom liked them too as they were easy and quick to make. I could also help make them at a pretty young age which I am sure was appreciated.
I hadn’t had these mini pizza’s for probably over 18 years. The other day, my significant other tapped into his inner child and said we should make pizza for dinner this week. I thought that sounded like a great idea and started pulling out the bread machine to make the dough. He stopped me and pulled out a package of English muffins from the freezer.
Those are for kids! I scoffed at the idea but then the more I got thinking about them the more I wanted to make them. Alright, how can I make them more adult? He then pulled out a bottle of Cava. Okay, getting warmer! The spinach is up in the garden so how about a homemade salad?
So there we have it. English muffin pizza’s, homemade salad with baby spinach from our garden, and a lovely glass of Spanish Champagne! Not a bad “adult” dinner after all.
For our pizza’s – serves two:
3 English muffins
Pizza or pasta sauce
Mozzarella cheese, shredded
Preheat your oven for 425°F. Line a cookie sheet with aluminum foil. This will catch any stray cheese so it does not burn onto your pan. Next, fork split your English muffins and then toast them in your toaster or you could put them in the oven for a few minutes. This is the best way to make sure your muffin has a nice “crust” and crunch, otherwise the sauce often makes the muffin soggy.
After your muffins are toasted to your liking, add the above toppings or create your own signature mini pizza!
Bake for about 10-15 minutes or until the cheese is melted and lightly browned/bubbled.
….and of course, enjoy with a nice glass of Cava with a cherry for looks!
