Easy Sweet and Spicy Rotisserie Chicken Chili

Love that slow cooked chili taste but want it quicker? Here is the solution: rotisserie chicken chili! Super easy, super fast, bowl of chicken chiliand darn tasty! Great for summer too as the chicken is much lighter than heavy beef chili.

I’m not sure why I never thought of this before…but after seeing a friend do this I thought “well duh!” Most grocery stores today have a selection of rotisserie chickens that are actually pretty good. Our local Shaws carries them all the time and most Fridays they have the $5 special which includes a free bottle of water along with the whole chicken.

With the ease of the chicken already being cooked, this homemade chili takes only a few minutes to put together and then can be put on the stove for a fast meal or in the crock-pot until you are ready to eat.

Remove all of the chicken meat from the carcass and put in the crock-pot.

Next add your desired chili ingredients. For our chicken chili I wanted something sweet and spicy. I added a can of kidney beans, diced tomatoes, a small can of jalapenos, baked beans (this is what gives the chili a sweetness that is really good), corn, and tomato sauce. For my dry spices I added chili powder, smoked paprika, and taco seasoning (about 2 tablespoons of each).

Let it cook for as long as you would like – mine was in the crock-pot for about 3 hours, but you could speed up the process by putting it in a pot on the stove for about an hour.
