Grilling Zucchini and Burgers – A Sure Sign of Good Weather
It was so nice out this weekend that we hauled out the grill. You know it is all downhill from winter when the grill gets dusted off and you bring out the beef. Nothing beats the smell of meat and veggies being grilled over a hot flame on a warm evening!
It was a great night for burgers this weekend as well as one of our all-time grilling favorite: grilled zucchini and yellow squash!
This is super delicious and super easy. Even squash haters will become enthusiasts when they smell these cooking! Begin with smaller tender zucchini and/or yellow squash (I cannot wait for these to be coming fresh from our garden!) and slice thin length-wise. Toss with 2-tablespoons of extra virgin olive oil and a shake or two of Lawry’s Seasoned Salt. You can also use regular salt and ground pepper but the sweet and savory salt is pretty awesome.
Lay out on the grill and turn when nice grill marks appear and the squash begins to soften – about 3-5 minutes. Once you have turned the squash, cook another 3-5 minutes and then remove.
Serve hot with a side of burger and some homemade dill pickles and homemade pickled beets! YUM – now that is the taste of summer!
