Kale Chips the Super Snack
I am definitely a snacker. I love anything salty and crunchy. Give me the option of salt or sweet and I will most likely pick the salt every time! I know chips and pretzels are not the healthiest for me so I have been on the hunt for a good alternative. The guidelines of “must-haves” included: being crunchy, salty, and satisfying.
Enter the kale chip!
This oh-so-easy to make snack is budget friendly, healthy, and darn tasty!
1 large bunch of kale
2 tablespoons of extra virgin olive oil
1 tablespoon of salt
Begin by washing and thoroughly drying your kale.
Using a sharp knife, fold the kale leaf to expose the main stalk or vein and remove. Preheat your oven to 350°F.
Cut or tear the kale into bite size pieces and spread them on a large baking sheet. Sprinkle with the olive oil and salt and using your hands, toss to evenly coat.
I then like to spread out the kale onto more baking sheets so they bake nice and crispy.
Place in the oven and bake for 10-12 minutes or until the edges turn light brown and they are crispy throughout.
If the edges are crispy but the thicker parts remain wet, I have often turned off the oven and left them in there to continue baking until they are completely dry. Just be sure to keep an eye on some of the smaller pieces so they do not burn.
I love these kale chips on their own, but they are also really yummy served with homemade dip!
