Homemade Chocolate Pudding
I don’t know many people who would pass up a bowl of pudding, especially chocolate pudding! I will warn you, this recipe is super rich, so while it is supposed to make two good sized servings, you could easily split this into 4 or even 6 serving bowls.
1/2 cup of sugar
3 tablespoons of cornstarch
1/2 teaspoon of salt
2 tablespoons of unsweetened coco powder
2 cups of skim milk
3 egg yolks
2 tablespoons of butter, softened
1 tablespoon of vanilla
In a saucepan, put the sugar, cornstarch, salt and coco powder in and then add the milk. Put the saucepan over medium heat and stir to dissolve the sugar and break up the coco powder and cornstarch.
Continue to stir until the mixture becomes thick and begins to bubble. Once it bubbles, cook for 2 minutes then take off the heat.
In a separate dish, beat the three egg yolks. Take a scoop (about 1/4 cup) of the hot pudding mixture and add it to the egg yolks and mix together.
Immediately add the egg mixture to pudding and stir. Put the pudding mixture back on medium heat and cook for an additional 2 minutes.
Once cooked, take off the heat and add the butter and vanilla. Mix until the butter and vanilla is fully incorporated. The butter will help smooth out any lumps that were in your pudding, not just add flavor!
Pour the pudding into serving dishes and let cool completely before serving.
If you are storing in the refrigerator, be sure to cover the dishes with plastic wrap so a layer of “skin” does not form on top of the pudding. Serve as is, or with some whipped cream on top! Enjoy!
