Holiday White Chocolate Chip & Cranberry Cookies

I love the way these cookies just look like the holidays! With the white chocolate chips and the red cranberries peeking out, they make any dessert table look festive! I enjoy the tartness of the cranberries and the sour cream as it tends to balance out the sweetness of the white chocolate. While you can use vanilla in this recipe, I like to use almond extract as the flavor combination of almond and cranberries make me think of Christmas!

1/3 cup of softened butter

1/3 cup of white sugar

1/2 cup of packed light brown sugar (you can use dark brown sugar but it will make your cookies darker – I think they look prettier as a lighter color cookie as it shows off the cranberries more)

1 large egg

1/4 cup of sour cream

1 teaspoon of almond (or vanilla) extract

1 1/2 cups of flour

1/2 teaspoon of baking soda

1/2 teaspoon of salt

1 cup of dried cranberries

1 cup of white chocolate chips

In a large bowl, mix the softened butter and sugars together until creamy.

Add in the egg, sour cream, and almond extract.

Mix in the flour, baking soda and salt. Mix well.

Drop heaping tablespoons of cookie dough onto lightly greased baking sheets, making sure they are at least 2-inces apart.

Ready for the oven

Bake at 375°F for 8-10 minutes or until the cookies are lightly browned on the top and bottom. Cool completely before storing in an air-tight container. This recipe should make between 2-3 dozen cookies, depending upon whether you like your cookies on the smaller or larger side.
