Apple Butter Cheesecake Bars

This is a super simple yet luscious dessert. The apple butter gives this dish some zip but the cream cheese keeps it Apple Butter Cheesecake Barsdeliciously decadent! This recipe is just in time for Thanksgiving as it makes up to  24 bars – for those who keep coming back for seconds, this is perfect dessert to make for a large crowd!

Crust:

3 cups of graham cracker crumbs (or you can use crushed vanilla cookies)

6 tablespoons of butter

Filling:

3 packages of 1/3 less fat cream cheese at room temperature

1/4 cup of sugar

3 eggs

1 teaspoon of vanilla extract

2 8oz jars of apple butter (also great with pumpkin butter!)

Melt your butter in a medium sized microwave safe bowl. Add the graham cracker crumbs and mix well. Press the butter and crumb mixture into the bottom of a greased 9×13 inch baking pan. Bake at 350°F for 10-12 minutes or until the crumb mixture browns slightly.

After the crumb mixture cools slightly, spread 1 jar of your apple butter over the crumb base.

In a large mixing bowl combine your cream cheese and sugar. Add the eggs and vanilla and mix until smooth.

Pour the cream cheese mixture over your baked crumb mixture spreading evenly with a rubber spatula.

Using your second jar of apple butter, drop spoonfuls of your apple butter on the cream cheese mixture.

Drag a toothpick or wooden skewer through the apple butter and cream cheese mixture to create a marbled effect.

Bake in the oven at 350°F for 30-35 minutes or until the cheesecake is set and no longer glossy. You can also test the bars with a toothpick – if it comes out clean, it is done.

Refrigerate for a few hours or overnight. Cut into bars and serve cold.
