Simple Four-Ingredient Shepards Pie
My family loves shepards pie. There is just something comforting about meat and potatoes together in one dish with hot gravy. I like to throw in some vegetables as well, corn or peas work best for us as they are favorites among the household. You can use all canned and instant ingredients if you want a quick dinner – this is great for unexpected company! Or, if you want to start from scratch, you can use your own homemade gravy, vegetables from your garden, and can even spice up the mashed potatoes with garlic or make smashed potatoes. You can get really creative and use smashed sweet potatoes on top instead of white!
What you will need:
1 pound of ground beef
1 can of beef (or any kind) gravy
1 can (I used 1 1/2 cups of frozen corn from our garden) of vegetables
Either homemade or instant (4 servings or 2 cups) mashed potatoes
Salt and pepper to taste
Brown the ground beef, adding salt and pepper to taste, and then drain the fat once fully cooked.
Heat your oven to 350°F. Start cooking your instant (or from scratch) mashed potatoes as you normally would. In a medium sized casserole dish, layer the browned beef on the bottom.
Pour on the gravy and then add the vegetables.
Once your potatoes are done, scoop that on top of everything.
Bake for about 15-20 minutes or until the gravy bubbles up and the top of the potatoes get slightly browned.
This recipe serves four and goes great with a cup of hot apple cider!
