Using about 2lbs or 14 carrots slice them into ½-1-inch pieces depending upon the size of the carrots.

Drizzle about 2 tablespoons of olive oil onto a large baking sheet that has an edge to prevent juices running out.

Transfer the cut carrots to the baking sheet. Spread them evenly and then drizzle ½ a Carrots going into the ovencup of pure Vermont Maple Syrup over the carrots. Bake at 375°F for about 30 minutes, stirring with a spatula to help evenly cook the carrots. Bake them until the carrots are soft but not mushy.

If you are trying to protect the health of your heart, maple syrup is a great all natural sweetener to use. It contains manganese and zinc, which are natural antioxidants that are great for your immune system. Good news for those of us with a sweet tooth!
